Ingredients:
For the Cake
- and 3/4 cups (220g) all-purpose flour
- 3/4 cup (65g) unsweetened cocoa powder
- 1 and 1/2 teaspoons baking powder
- 1 and 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 and 1/2 cups (300g) granulated sugar
- 1/2 cup (120ml) vegetable oil
- 1 cup (240ml) buttermilk
- 2 teaspoons vanilla extract
- 1 cup (240ml) hot water or coffee (coffee enhances the chocolate flavor)
- 1 cup (240ml) heavy cream
- 8 ounces (225g) semi-sweet or dark chocolate, chopped into small pieces
- 1 tablespoon unsalted butter (optional, for extra sheen)
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch (20cm) round cake pans. Alternatively, you can line them with parchment paper.
- In a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- In another large mixing bowl, beat the eggs, sugar, oil, and vanilla extract until smooth.
- Add the dry ingredients to the wet ingredients in 2-3 batches, alternating with the buttermilk. Mix until just combined.
- Gradually add the hot water or coffee to the batter while stirring gently. The batter will be thin, but that's normal.
- Divide the batter evenly between the two prepared cake pans.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Remove the cakes from the oven and let them cool in their pans for about 10 minutes. Then remove them from the pans and let them cool completely on a wire rack.
- While the cakes are cooling, prepare the ganache. Heat the cream in a saucepan over medium heat until it starts to simmer.
- Remove the cream from heat and add the chopped chocolate. Stir until the chocolate is melted and the mixture is smooth.
- If desired, add the butter for extra gloss and stir until fully melted.
- Once the cakes have cooled, place one cake layer on a serving plate or cake stand.
- Spread a layer of ganache on top of the first cake layer. Place the second cake layer on top and gently press down.
- Pour the remaining ganache over the cake, allowing it to drip down the sides.
- Let the ganache set for at least 30 minutes before serving.
