Classic Chicken Parmesan

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably Italian style)
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh basil leaves (for garnish)

Instructions:

  1. Prepare the Chicken: Flatten the chicken breasts to an even thickness by pounding them with a meat mallet. Season with salt and pepper.
  2. Bread the Chicken: Place flour, beaten eggs, and a mixture of breadcrumbs and Parmesan cheese in separate bowls. Coat each chicken breast in flour, then dip in eggs, and finally coat with the breadcrumb-Parmesan mixture.
  3. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 3-4 minutes on each side, until golden brown. Place cooked chicken on a baking sheet.
  4. Add Sauce and Cheese: Preheat oven to 375°F (190°C). Spoon marinara sauce over each chicken breast and top with shredded mozzarella cheese.
  5. Bake and Serve: Bake in the oven for 15-20 minutes, or until cheese is melted and bubbly. Garnish with fresh basil leaves and serve with pasta or a salad.
